Winemaking:
After receiving the grapes, they are de-stemmed and crushed. The wine masses are channeled into small fermentation vats equipped with a refrigeration system. Maceration enzymes are then added to them, which will ensure that the coloring matter and tannins are extracted as much as possible from the must. Then, the selected yeasts are added, and alcoholic fermentation begins. During this period, which varies between 4 and 8 days, the blanket is watered several times a day.
Pumping over is programmed depending on the stage of maturation of the grapes and the type of wine to be obtained.
The entire fermentation process takes place at a temperature between 25º and 28ºC.
Tasting notes:
Clear appearance, ruby color with brownish reflections. Vinous aroma, with notes of red and vanilla fruits. Balanced flavor, good structure, soft and fruity.
How to serve:
Ideal to accompany red meat dishes, as well as all types of sausages. It can also be served with fatty fish dishes and strong cheeses. It should be served at a temperature between 16 and 18ºC. Open the bottle about an hour before, if necessary, transfer it to a decanter to aerate the wine a little to enhance its organoleptic characteristics.
Basement conservation:
Keep in the original box at a temperature of 12ºC and humidity between 60 and 70%.
