Winemaking
Grapes harvested by hand in early August, with berries selected on a sorting table. Cold pre-fermentation maceration for 48 hours and fermentation at controlled temperature in small stainless steel mills, with treading and delestage. After fermentation, the wine remained in the tank with the masses for another 90 days. It was then aged in new 500-liter barrels for 24 months.
Tasting notes / Pairing
A garnet-colored wine, still with ruby hues, with enormous aromatic complexity, where notes of ripe blackberries, balsamic, black olives, dark chocolate and various spices are mixed. The generous and robust body contains solid but velvety tannins, all supported by excellent acidic freshness. A wine of great distinction and class, with years of life ahead.
