Tasting Notes: Visually, it presents a ruby garnet color with good intensity and violet reflections. The aroma reveals restraint and complexity at first. It displays ripe fruit, plum, cherry, and herbal notes. Time in the glass brings earthy notes. The palate is rich and textured, with tannins present, but tamed by the clay. A lively acidity brings fantastic balance and life. It finishes long and complex, savory and lingering.
Pairings: A wine of contemplation, it can, above all, be enjoyed in good company and paired with a cured sheep's cheese, such as Nisa, cut into small pieces in the Amareleja style. It pairs well with stewed meats, including game. True to our origins, it pairs harmoniously with grilled black pork with migas (breadcrumbs), and is also a great partner with cheeses and sausages.
