Grape Varieties: Encruzado
Winemaking: The harvest took place in the first week of September. The grape variety used was only Encruzado. The grapes were fully destemmed and immediately pressed. The resulting must was transferred to new 250lt French oak barrels, where it fermented with indigenous yeasts and aged for 6 months. During fermentation, a light concreting was done, as the wine itself already showed considerable richness and complexity.
Tasting Notes: Citrine yellow color, clear and bright appearance. Aroma of lemon, floral resin (violets). Very complex, slight barrel sensation, soft vanilla. Good structure, with character, the acidity stands out, remaining throughout the mouth and lingering with a spicy finish (ginger). The unctuousness of the barrel can be felt, without being overpowering on the palate, due to the light aging and remaining on the lees.
