Vinification:
Harvesting takes place in early August. The grapes are destemmed and crushed. The alcoholic fermentation process then begins at a controlled temperature of 25ºC. During this period, maceration occurs for 7 days with pumping over in order to optimize the extraction of color, aromas and flavors. Next, malolactic fermentation occurs, which is essential for the smoothness and softness of the wines. After this period of time, during which the wine stabilizes through physical processes in stainless steel tanks, the wine is filtered and bottled in early spring.
